The plum monaka come in three varieties: Red Plum, White Plum, and Twilight Plum, which faithfully reproduce the plump shape of plum blossoms.
Each of them is made with special attention to the fillings, such as Chidori bean paste, Koshi bean paste, and Ogura bean paste, and the balance between the filling and the mochi skin is exquisite.
It has been well received.

Plumply cooked red beans,
Soak in honey overnight,
In order not to damage the roundness of the beans,
The carefully kneaded bean paste is
Kofuku mochi wrapped in gyuhi (rice cake).

The green pea filling sandwiched between a baked skin made of flour, eggs, and sugar became popular in the mid-Meiji period.
Mikasayama was built by my great-grandfather Ichitaro after much effort.
